This is a double handle Paniarakkal, a traditional Indian dish made of rice flour, dal, water, and salt. It is a light, fluffy and crispy Indian snack. The Paniarakkal is traditionally cooked on a kadai, a vessel with a round or oval bottom and a small handle. The rice flour is mixed with water and salt and then spread on the round bottom of the kadai. The kadai is then heated over a fire or gas flame until the mixture starts to sizzle. The mixture is cooked on one side of the kadai until it turns brown and starts to form a crust. The kadai is then turned over and the other side of the kadai is cooked until the mixture turns brown and forms a crust. Once the Paniarakkal is done, it is scooped up with a ladle and flipped over to cook the other side.
